Harvesting

Leafy vegetables, cut and come again

Cutting above the crown leaves the growing point so the plant regrows for repeat harvests. Early morning picking gives crisp, well-hydrated leaves that keep longer once cut.

When

Late spring through autumn, from about 3 to 6 weeks after sowing once leaves reach 8 to 10cm. Pick in the cool of early morning.

How

1. Take the outer, larger leaves first, or cut the whole plant across about 2.5cm above the crown with clean scissors. 2. Leave the central growing point and small young leaves intact. 3. Do not tear or pull, which loosens the roots. 4. Water and give a light feed after cutting. 5. Repeat every 1 to 2 weeks; most crops give three or four cuts before running out.

Notes

Suits loose-leaf lettuce, rocket, spinach, chard, mustard and oriental leaves and salad mixes. Pick little and often to stop plants bolting, and sow in succession for a continuous supply.
